Jake Stolz moved to Oakland in 2021 to work in the cannabis industry but became inspired by a friend's mushroom cultivation. He opened Fungi Foods, a restaurant dedicated to mushrooms, five years later. Stolz started Fungi Farms in 2022 from his apartment, selling mushrooms at work and farmers markets. After quitting his cannabis job, he expanded his operation to a barn in Orinda. Despite lacking kitchen experience, he pursued his dream of creating mushroom-centric vegan dishes.
